This amazing quick stir fry is my favourite! What do you do with tomatoes from your garden - try this for your tamalees!
2 Medium size ripe tomatoes per person
(cut in 1 " wedges")
2 Tablespoon of sugar
1/2 Teaspoon of salt
1 Tablespoon of real soya sauce
1/2 lb of beef (marinated - see my recipe for MARINATING BEEF FOR STIR FRY)
Cooked Rice or Noodles enough for each person
1/4 Cup of diced green onions for garnish
1 Fresh clove of garlic smashed & crushed

In a wok or dutch oven pot cook the meat (see my recipe for MARINATING BEEF FOR STIR FRY) take out and set aside. Put in your tomatoes with another 1 tablespoon of vegetable oil mix and stir until the juices from the tomatoes come to out add sugar, salt, stir for 1-2 minutes until tomatoes are soft and cooked then add meat and stir & mix then put on top of steamed cooked rice or noodles and garnish with green onion tops.
